History of pepper

Hot pepper (Capsicum annuum, its scientific name) is a plant fruit of the bell pepper family, which is a member of the eggplant family. Pepper is a plant that grows in subtropical and tropical climates. Due to the high level of capsaicin in it, this plant has a spicy taste, depending on its type and species, the degree of pepper spiciness varies from 0 (bell pepper) to 3,180,000 (PepperX).

The inhabitants of Mexico, Central America and South America had chili peppers more than 6000 years ago. After the discovery of America by Christopher Columbus and the extensive exchange between the continents, various types of hot pepper were found all over the world. Within a few decades of contact with Spain and Portugal in the 16th century, the New World plant made its way across Europe and into Africa and Asia.

Spicy meat sauce:

  • 3 tablespoons of butter

  • 5 tablespoons of Abizh garlic hot pepper sauce
  • Enchilada Sauce:
  • 6 large tomatoes
  • 180 grams of cherry tomatoes
  • 225 grams of small sweet pepper
  • 1/3 cup lemon hot pepper sauce
  • 1 tablespoon of olive oil
  • 2 teaspoons of salt
  • 1 large red onion, finely chopped
  • 2 cloves of chopped garlic
  • 3 cups of chicken or vegetable stock
  • 3 tablespoons of tomato paste
  • 6 to 8 corn tortillas
  • 14 ounces of refried beans (400 grams)
  • 1 sliced ​​red or orange bell pepper
  • 1 small red onion sliced
  • 300 grams of grated cheese

INSTRUCTIONS

Heat the oven to 180 degrees Celsius. Fry the minced meat with 3 tablespoons of butter, then add 5 tablespoons of classic Abizh hot pepper sauce, paprika and 5 tablespoons of Abizh garlic hot pepper sauce and set aside. Fry red onion with oil, then add tomato paste and fry until cooked. Add two types of tomatoes, hot lemon pepper sauce, salt, chicken broth or vegetables to the above ingredients, cook for 15 minutes and puree with a blender. Pour half of the sauce in a dish or pot for the oven. Place fried beans, some beef, some pepper, onion, grated cheese on each tortilla, roll the bread and place it on a tray on the sauce and repeat the same with the rest of the ingredients. Then pour the rest of the sauce and cover it with cheese. Place the dish in the oven and cook for 20 minutes or until the cheese turns golden.
